I'll be in the US from January till March. However, during the month of February, my ESTA is going to expire. Do I have to renew it then? After all, they are not going to notice when exactly I actually leave the country, do they?

ESTA needs to be valid only when you enter the country. They dont care if its valid or not when you depart the US.
