fryer

Question

Have hesitated about buying a fryer to fry frozen croquettes aux crevettes grises (I often have this in a resto) and other frys due to smell, hassle of storage, and oil usage / disposal. Anyone have good experience and can recommend a fryer ?

well we use the traditional deep fryer -- when the oil is cold -- you can place a cover over it -- stops dust etc. when the oil is old -- when cold -- easily pous into and old bottle (use a plastic funnel) - then we drop the oil off at the recycling yard (often weeks later (use bottle with screw top!) There are expensive fryers around that use a teaspoon of oil for the same results (though the prices of these are falling)
