removing info/data from a mac

Good morning,

I need to get a bunch of data off my mac. This includes passwords, which at some point I clicked on 'remember on this computer' and now cannot get rid of even if I clear all history and cookies.
I also want to remove all my music from itunes.

Can you please advise how to do this?
