can anyone recommend someone to dg out and old drain with fat reservoir and replace it with something more modern (that does no smell). Preferably some one who can speak English I am not a all sure my French or Flemish are up to this level.

Not sure if andy does it, but google andy fish plumbing.
We used his services after 2 other belgian companies quoted some ridiculous prices. Andy came in, gave us a quote and his prices turned out to be 50-60% less than others.
